My poor little hobby blog has been severely neglected. Pre-nursing classes will do that, though. When I do have free time, I spend it baking. I’ve found that I kind of rock at baking, especially muffins and other sweet breads. Today, I baked Pineapple Bread! However, the comments on this recipe had lots of different tips about making the bread better than the original. Here is my final recipe:


2 eggs
1 cup sugar
1 can (20 oz) of crushed pineapple (I used pineapple rings ran through a blender)
1 tsp vanilla  extract
3 cups all-purpose flour
1tsp baking powder
1/2 tsp baking soda
3/4 tsp salt

  1. Preheat oven to 350 F
  2. Because I lacked crushed pineapple, I drained one can of pineapple rings (save the juice!!!) and pureed them in a blender. Set aside until Step #4
  3. In a medium sized bowl, beat eggs. Add butter and sugar, then beat until smooth
  4. Mix in pineapple and vanilla extract.
  5. In a large bowl, combine flour, baking powder, baking soda, and salt
  6. Stir wet ingredients into the large bowl
  7. Pour batter into a greased pan. I used a bread pan.
  8. Bake at 350 F for 55 minutes
  9. Remove from oven and let cool for 10 minutes before removing from pan. Use a butter knife to loosen the sides.
  10. Cool and wrap

The bread is more cake-like than anything, but really good. I added some glaze to make it more interesting and it turned out amazingly well, in my opinion.
Highly Recommended Pineapple Glaze
1/2 cup butter
2 1/2 cups powdered sugar
1/2 cup brown sugar
6+ tbs crushed pineapple (I opened a new can to do the glaze)
4+ tbs pineapple juice
  1. Because I lacked powdered sugar, I ran granulated sugar through the blender 1/2 cup at a time. I also combined the 1/2 cup brown sugar (I ran out of white and had to substitute) and 1/2 cup of white sugar in the blender.
  2. Cream butter and sugar until well blended
  3. Stir in pineapple and pineapple juice to taste
  4. Do not add to bread until it is out of the pan. Spread liberally all over the top of the bread.
  5. Wait about 5 minutes for it to cool.
  6. Slice bread and enjoy!

It’s okay to be jealous, but you could always make your own. This is a seriously easy recipe and I encourage everyone to give it a try. Feel free to pass along this recipe, too! Linking back here would be really awesome, though. I’m kind of an attention fiend like that. 😉

Cooking With Pumpkins

I am making a pumpkin pie… from scratch. I’ve declared war on that gaint pumpkin. We werstled all the way up and down the counter, but I cut it in half. I gutted it with a metal ice cream scoop and a steak knife. There was a mighty struggle, but we finally called truce when one forth of it was cut into chunks and tossed into a kettle of water to boil until tender.

I’m up to my elbows in pumpkin boogers and I’m pretty sure I’ve got seeds in my hair somewhere… but by golly, we WILL have pie.

Busy Day

Today, I will aqquire 4 goats… 1 mommy, 1 daddy, and twin boys.

Today, I get the last of the repairs done on my car.

Today, I go goat-shopping as well as pizza-fixings shopping.

Today, I am a busy girl… but I am happy.

Btw, you guys totally need to do business with the Squoosh lady. Seriously, nice as she can be, and her yarn is so very, very pretty and lovely. <3<3<3<3 It’s costly, though… $22 for another skein of superwash wool sock yarn. Totally worth it, though, even if it was just knowing there’s still good online sellers left in the world.

Another Day of Productivity

Okay, in all honesty, I haven’t been as productive today as I was yesterday. *shrugs* Then again, what can compare to playing phone tag to get things turned on and off and switched to new locations?

I filled up my swap-buddy’s box last night. I put everything that would possibly be harmed by the potential disaster of the BBQ sauce breaking and put them in gallon sized Ziploc bags. I wrapped all fragile in newspapers, but I still worry. Only the book on crochet stitches (very much like the one Haley got me) wouldn’t fit into a baggie. I guess I just gotta hope for the best on that.

Anyway, it went out today and now the postal workers want to join swaps… only thing is, none of them yarn craft. *shrugs*

I haven’t packed a thing since Monday. We have a ton of boxes, though. The cats think we got the boxes for them so they’d have a kitty tower in the living room. Silly kitties…

I have a test tomorrow in Brit Lit that I reeeeeaaaaallllllly need to go study for. Anyone want to go take it for me?

Bleah… it’s gotta get done.

BBQ Swap Part 1

Close-up part one… All the cotton yarn goes with the pattern she sent for an apron. The superwash wool is just awesome.

The bag of chocolates came open and melted on some of my stuff. I cleaned up most of it, but my white yarn looks a bit icky now. Oh well, I can always find more.

The crochet hook is quasi-flexible! Who knew? And I can’t wait to try out the spicy chocolate! Oh and “I Taught Myself Knitting” is one awesome gift. Kudos to her!

I have everything, just gotta get it boxed and sent. ^_~ I hope she likes “John Boy & Billy BBQ Sauce” or whatever it was called… lol I’m horrible, sending her all these redneck sauces like that, creole seasoning, some other kind of sauce… But she said she likes “southern bbq” and spices. lol Oh well, if she hates it, what can ya do?

With that, I need a nap.

A New Week

This week is off to a better start.

I finished my BBQ-swap-buddy’s hand-made items yesterday. They look awesome and I’ve sworn to make more for mine and Larry’s new kitchen. I still need to buy her some more things before I send the package, though.

Bleah… so tired. It’s also storming outside, which makes me even sleepier.

Finally Well?

Today I actually felt like cooking. I made spaghetti and garlic toast. ❤ Mmmmmm, just what a body needs to finish up getting well! I’m still hacking and my allergies are still aggravated due to all the lawn mowing outside… But compared to how I was? I feel pretty spiffy.

I goofed up on Chrissy’s hat. I got excited and started making the “bowl” again. Then I relapsed in my illness and haven’t picked it up since “frogging” it back down to a “pizza.” I’m sure you guys are getting your giggles thanks to my terminology. ^_~ Oh well, I’m still learning.

Connie hasn’t gone home yet to get her package of crochet goodies yet. She prbly will next weekend, though. Kingdra has also expressed interest in crochet, so I’ll prbly bring yarn and hooks to work and show her. I’ve got several I hooks laying around (I think the count is up to five) and some leftover yarn from Raquel’s hat that she could play with at work.

Life is pretty spiffy right now. Let’s just hope the school stuff resolves this week. I hope it does… then I’ll be set!
